Roasted Butternut Squash with Holiday Harvest Glaze

🧂 Ingredients
- 1 butternut squash, peeled, seeded, & cut into 1-inch cubes
- 1/2 cups fresh green beans, trimmed
- 1/4 cup walnuts, roughly chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons butter (for the pan)
- 2 tablespoons olive oil
- 2 tablespoons Washam Farms Holiday Harvest Jam
- Salt and freshly ground black pepper, to taste
- Optional: a drizzle of balsamic glaze for serving
🔥 Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C). Lightly butter a large roasting pan or baking sheet. -
Prepare Squash:
Toss cubed butternut squash in a bowl with olive oil, salt, and pepper. Spread evenly on the buttered pan. -
Roast:
Roast for 20–25 minutes, stirring halfway through, until squash is golden and tender. -
Add Green Beans & Walnuts:
Add the green beans and chopped walnuts to the pan. Roast for another 8–10 minutes, just until the beans are tender and walnuts are toasted. -
Glaze with Jam:
Remove the pan from the oven. While still hot, gently toss everything with Holiday Harvest Jam so it melts slightly and coats the vegetables. -
Finish & Serve:
Sprinkle with crumbled feta cheese before serving.
Optional: drizzle lightly with balsamic glaze for extra depth and color.
