Roasted Butternut Squash with Holiday Harvest Glaze

🧂 Ingredients

  • 1 butternut squash, peeled, seeded, & cut into 1-inch cubes
  • 1/2 cups fresh green beans, trimmed
  • 1/4 cup walnuts, roughly chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons butter (for the pan)
  • 2 tablespoons olive oil
  • 2 tablespoons Washam Farms Holiday Harvest Jam 
  • Salt and freshly ground black pepper, to taste
  • Optional: a drizzle of balsamic glaze for serving

🔥 Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Lightly butter a large roasting pan or baking sheet.
  2. Prepare Squash:
    Toss cubed butternut squash in a bowl with olive oil, salt, and pepper. Spread evenly on the buttered pan.
  3. Roast:
    Roast for 20–25 minutes, stirring halfway through, until squash is golden and tender.
  4. Add Green Beans & Walnuts:
    Add the green beans and chopped walnuts to the pan. Roast for another 8–10 minutes, just until the beans are tender and walnuts are toasted.
  5. Glaze with Jam:
    Remove the pan from the oven. While still hot, gently toss everything with Holiday Harvest Jam so it melts slightly and coats the vegetables.
  6. Finish & Serve:
    Sprinkle with crumbled feta cheese before serving.
    Optional: drizzle lightly with balsamic glaze for extra depth and color.
