Greek Omelet
with Washam Farms Greek Seasoning

Ingredients (Serves 2)
- 4 large eggs
- 1 tablespoon olive oil or butter
- 1/4 cup diced red onion
- 1/4 cup sliced grape tomatoes
- 2–3 peperoncini, sliced
- 1 teaspoon Washam Farms Greek Seasoning (add more to taste)
- A pinch of crushed red pepper (optional, for heat)
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
Instructions

Whisk the eggs:
In a bowl, whisk together eggs and Washam Farms Greek Seasoning until light and frothy. -
Sauté the veggies:
Heat olive oil or butter in a nonstick skillet over medium heat.
Add red onion and cook until softened, about 2–3 minutes.
Stir in tomatoes, peperoncini, and a pinch of crushed red pepper. Cook for another minute. -
Add the eggs:
Pour in the egg mixture, tilting the pan so it spreads evenly over the vegetables.
Let cook until the edges begin to set. -
Add the feta and fold:
Sprinkle crumbled feta evenly over the top.
Fold one side of the omelet over the other and cook another minute or two until just set in the center. -
Serve:
Slide onto a plate and top with a little more feta, a sprinkle of Washam Farms Greek Seasoning, and a drizzle of olive oil if you like.
