Greek Omelet

with Washam Farms Greek Seasoning

Wake up to the taste of the Mediterranean! This hearty Greek omelet is packed with bold, fresh flavors — red onion, juicy tomatoes, tangy peperoncini, and creamy feta — all brought to life with Washam Farms Greek Seasoning.

Ingredients (Serves 2)

  • 4 large eggs
  • 1 tablespoon olive oil or butter
  • 1/4 cup diced red onion
  • 1/4 cup sliced grape tomatoes 
  • 2–3 peperoncini, sliced
  • 1 teaspoon Washam Farms Greek Seasoning (add more to taste)
  • A pinch of crushed red pepper (optional, for heat)
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste

Instructions

  1. Whisk the eggs:
    In a bowl, whisk together eggs and Washam Farms Greek Seasoning until light and frothy.
  2. Sauté the veggies:
    Heat olive oil or butter in a nonstick skillet over medium heat.
    Add red onion and cook until softened, about 2–3 minutes.
    Stir in tomatoes, peperoncini, and a pinch of crushed red pepper. Cook for another minute.
  3. Add the eggs:
    Pour in the egg mixture, tilting the pan so it spreads evenly over the vegetables.
    Let cook until the edges begin to set.
  4. Add the feta and fold:
    Sprinkle crumbled feta evenly over the top.
    Fold one side of the omelet over the other and cook another minute or two until just set in the center.
  5. Serve:
    Slide onto a plate and top with a little more feta, a sprinkle of Washam Farms Greek Seasoning, and a drizzle of olive oil if you like.
