Berry Cherry Country Muffins

Ingredients
- 2 cups all-purpose flour
- ¾ cup sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup buttermilk
- ½ cup melted butter
- 2 eggs
- 1 tsp vanilla extract
- ¾ cup Berry Cherry Country Jam
- ¼ cup extra jam for topping
- Optional: coarse sugar for a bakery-style top
Instructions
Preheat oven to 375°F and line a 12-cup muffin pan.
In a bowl whisk together:
- flour
- sugar
- baking powder
- baking soda
- salt
In another bowl mix:
- buttermilk
- melted butter
- eggs
- vanilla
Add wet ingredients to dry ingredients and mix just until combined.
Gently fold in ¾ cup Berry Cherry Country Jam, leaving light streaks.
Fill muffin cups ¾ full.
Add about 1 teaspoon jam on top of each muffin and lightly swirl with a toothpick.
Sprinkle with coarse sugar if desired.
Bake 18–22 minutes until golden.
Cool slightly and serve warm.

Spread a little extra Berry Cherry Country Jam on the warm muffin with butter.
